Menu Planning Monday

I’m going to share a little secret with you folks. That secret is that when it comes to the cooking dinner bit that I’m normally so good at, I’ve failed and failed spectacularly at it for a couple months now. Between Christmas & New Years, having vacation days to burn and crappy sinus infections, I’ve totally let planning dinner fall to the wayside.

However, this week, I menu planned with the help of my new menu planner (more details about that to come Wednesday), went grocery shopping and plan to actually cook a meal tonight that includes side dishes, and for most of the nights this week.

Monday: Bubble Up Enchilada Casserole with Tossed Salad & Grapes

Tuesday: Cheesy Chicken & Rice Bake with Grapes

Wednesday: Ziti with Caesar Salad and Garlic Bread

Thursday: Pan Fried Chicken with Baked Potatoes and Broccoli

Friday: Leftovers

Saturday: Tacos with Spanish Rice

Sunday: Eating Out (Assuming we still go to the Falcon’s playoff game)

    To start the new year we decided to plan out our meals as well. This is the first time we have tried this so we hope it helps stick with eating more at home.

    Here is our menu for the week.

    Monday: Taco salad with Spanish rice

    Tuesday: Spaghetti (Made with our homemade sauce)

    Wednesday: Pizza night, take out.

    Thursday: Turkey sloppy Joe’s (Brian might make some homemade french fries)

    Friday: Leftovers

    Saturday: Soup/stew recipe we got from Brian’s mom.

    Sunday: Turkey Chili

    Do you calculate the cost per meal? I just thought about doing that as well. I bet it would be cool to see how inexpensive cooking can be.

    • Calculate cost per meal? Haha.. Heck no.. That is FAR too much math for me. Although I bet Joseph would have fun with that!
