Tasty Tuesday: Cheesy Cauliflower Casserole

So, last night, Crossfit smoked my arms. Holding them up hurt, using them hurt, pretty much everything hurt. So, Tasty Tuesday is a little less prepared than normal.

This recipe is honestly something that, if you go by the ingredients, sounds pretty gross. However, it isn’t. This is one of the tastiest side dishes. It’s an altered family favorite so that it’s easier to dish out and eat (especially if your arms are really tired!).

I promise you, this tastes way more amazing then it necessarily sounds.


1 head of Cauliflower
Mayonnaise (Light or not, your preference)
Spicy or Yellow Mustard (your preference)
Sliced Green Onions
Shredded Cheddar Cheese
Salt, Pepper & Cajun Seasoning


Pre-heat oven to 350

Cut cauliflower into florets. Add to pot and cover with water. Cook on high for 10 minutes after it starts boiling.

Drain Cauliflower and mash half up.

In a bowl, mix the cauliflower, mayonnaise, mustard, green onions up, salt, pepper and cajun seasoning. Depending on the size of your cauliflower will depend on how much to use. You want to use more mayonnaise than mustard and it should be slightly creamy. Once that is well mixed, add in some cheese.

Pour into a greased baking dish and top with cheddar cheese

Bake for 10 minutes or until cheese is melted and bubbly. If you want a slightly browner top, broil for a few minutes.
