Tasty Tuesday: Zucchini Boats 2 Ways

So, although tonight’s dinner is my brainchild, after only getting 3.5 hours of sleep (less then the guy who actually worked all night), I’m letting Joseph take the reigns on cooking.

When trying to figure out dinner tonight, I knew I wanted something that would be relatively easy and delicious but still healthy. We had a pound of ground beef in the fridge that I knew we should probably use and I remembered seeing Mediterranean Zucchini boats on pinterest a few weeks ago but I wanted to embrace flavors that I knew Joseph would appreciate more.

When it comes down to it, he is a simple and easy to please guy. He likes cheeseburgers and tacos, like most guys. These are the flavors I chose to highlight with our zucchini boats.

Ingredients:
1 lb Ground Beef
2 large Zucchini
Cheddar Cheese

Taco Zucchini Boat:
Salsa to taste
1/2 package Taco Seasoning

Cheeseburger Zucchini Boat:
Ketchup to taste
Mustard to taste
BBQ Sauce to taste

Directions
Preheat oven to 350

Brown the ground beef in medium heat

While ground beef is cooking, cut the zucchini in half longways and hollow out the middle, making two “boats”

Add half of the ground beef to a bowl and mix in the mustard, ketchup and BBQ sauce to taste and until it holds together nicely. Leave the other ground beef in the pan and add the taco seasoning and salsa, cooking the mixture down until most of the moisture from the salsa evaporates.

Fill each zucchini boat with the meat mixtures and top with cheddar cheese

Bake each boat for 10-15 minutes until cheese is melted and zucchini is tender.
