Tasty Tuesday: Cauliflower Tots

A couple of weeks ago, I discovered these cauliflower pancakes. They were pretty tasty and easy to make as well as low carb and a relatively healthy side. However, there is a downside to them and that is they are needy. You can’t really prepare them in advance because then they won’t be hot, you have to babysit them because they have to be flipped.

Then I had a brain child, Cauliflower Tots! Simple, easy and takes about 15-18 minutes to bake so you have time to grill up some steaks, or fry up some chicken while they bake in the oven.

Cauliflower Tots
Serves 4. Calories: 181, Carbs 14: Fat: 9, Protein: 11

1 head of Cauliflower, chopped up into florets
1/2 cup Panko
3/4 cup Cheddar Cheese
2 Eggs
Dash of Chili Powder
Dash of Cayenne
Salt, Pepper & Cajun seasoning to taste.

Preheat oven to 400

Bring cauliflower to boil and cook for ten minutes or until cauliflower is tender enough to be mashed. Drain the water and mash the cauliflower.

Add the remainder of the ingredients, seasoning well (very well) and mixing it up well.

Spray a mini muffin tin with non-stick spray and divide the mixture among the cups. I think mine typically makes about 20 tots. Mash down the mixture with the back of the spoon.

Bake for 15-18 minutes or until browned.

Run a knife around the edge of the tots before trying to remove them from the pan. Serve with sour cream.
